Not all coffees produce great flavours when roasted that bit longer. We take our time to find out which coffees have the characteristics to stand up to a hotter, longer roast. Only when we know it has all the flavour and mouthfeel we expect will we allow it to go out to our customers as a 'Dark Roast'. We intentionally avoid roasting our coffee as dark as some other coffee producers may take their coffee. Whilst we recognise that many customers enjoy a smooth, rich tasting coffee, we believe it's important to avoid any acrid or burnt like flavours in the cup.
